Coffee Cakes: simple, quick and egg free recipes

Coffee is an ingredient that is widely used to make cakes, biscuits, mousse, ice cream and many other preparations. Some recipes can be challenging, while others are a lot easier and quicker to prepare. If you are short on time and have just noticed that you don’t have enough eggs in your pantry, here are two recipes with coffee that are simple and quick to prepare.

Coffee Cake with No Eggs

To prepare the coffee cake you need only five ingredients:

  • 320g flour
  • 215g sugar
  • 160ml coffee
  • 160ml milk
  • A sachet of baking powder

You’ll prepare it in the blink of an eye. Preheat the oven to 170°C or 325°F, so it will have reached the temperature by the time the mixture is ready. Add the flour to the sugar and baking powder with a sieve so as to prevent lumps from forming in the mixture. Stir in the milk slowly, mixing gently. Finally stir in the coffee. For a richer taste, you can add a couple of handfuls of chocolate drops or chopped hazelnuts to the mixture. Grease and flour a baking tray or line it with greaseproof paper. Pour the mixture into the tray and bake in the oven for about 30 minutes. You can also customise your egg free coffee cake by using a heart-shaped baking tray or one with another design.

Coffee Ciambellone with No Eggs

To make the Coffee Ciambellone you need:

  • 320g flour
  • 55g potato starch
  • 230g sugar
  • 90g butter
  • 140ml coffee
  • 235ml milk
  • A sachet of baking powder

Make some espresso coffee and, in the meantime, let the butter melt a bain marie. While the butter cools down, mix all the powders in a bowl: flour, potato starch, sugar and baking powder. Add the warm butter and the coffee, making sure that no lumps form. Finally pour in the milk slowly, mixing gently. Pour the mixture into a greased and floured baking ring mould. Bake in the oven at 180°C or 350°F for about 30 minutes.

Coffee cakes are not only perfect to accompany the most famous Italian brew, but also tea, milk or simply on their own. These recipes are ideal at breakfast, as a snack during the day or with your afternoon tea.
